# How-To Steps:

01 - Place chicken thighs or breasts in a large stockpot. Add water, bay leaves, peppercorns, and 2 teaspoons salt. Bring to a boil, then reduce heat and simmer uncovered for 30 minutes, skimming any foam from the surface.
02 - Transfer chicken to a plate and let cool slightly. Discard bay leaves and peppercorns from the broth.
03 - In a large skillet or the same pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté for 5 to 6 minutes until slightly softened. Add garlic, thyme, and oregano; cook for one additional minute.
04 - Return sautéed vegetables to the broth. Remove skin and bones from the cooled chicken, shred or dice meat, and add back to the pot.
05 - Bring the soup to a gentle boil. Stir in egg noodles and cook for 8 to 10 minutes until tender.
06 - Incorporate chopped parsley. Adjust salt and freshly ground black pepper to taste. Remove from heat.
