  • Tortillas: 6 large (10-inch) flour tortillas
  • Pantry & Spices: 1 tbsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp chili powder (optional)

Instructions

Step 1:
In a large skillet over medium heat add olive oil Sauté onion and bell pepper for 3–4 minutes until softened
Step 2:
Add sausage and cook breaking it up until browned and cooked through about 5–6 minutes Drain excess fat if needed
Step 3:
Stir in chopped spinach and cook for 1 minute until wilted Transfer mixture to a bowl and set aside
Step 4:
In a mixing bowl whisk eggs milk salt pepper and chili powder (if using)
Step 5:
Pour eggs into the same skillet and scramble gently over medium-low heat until just set but still soft Remove from heat
Step 6:
Warm tortillas in the microwave for 20 seconds to make them pliable
Step 7:
Assemble the burritos On each tortilla layer egg mixture sausage and veggies and sprinkle with cheese
Step 8:
Fold in the sides and roll up tightly
Step 9:
To freeze Wrap each burrito tightly in foil or parchment paper then place in a freezer bag

To reheat Microwave unwrapped burrito for 1–2 minutes or bake in a 350°F (175°C) oven for 20 minutes from frozen
